In 2016, Czompa Fanny, representing BGE, participated for the first time in the Olivier Roellinger chef competition and brought home a regional bronze medal at the European Championship. Over the course of her career, she has worked in establishments ranging from Michelin-starred restaurants to fine dining bistros. She is currently the head pastry chef at the Rutin restaurant in Budaörs, which is also listed in the Michelin Guide, and at its associated MiMi’s patisserie.
At university, her favorite teacher was Dénes Sándor, whom she greatly respected and feared at the time, but today she understands—and indeed lives by—the principle that there is no point in working without high standards. In this spirit, she prepared for the 2016 Olivier Roellinger competition. Tischler Petra, already an expert in fish preparation at the time, and Laurent Lemal, the 2015 French Bocuse d’Or winner who was giving a demonstration at the BGE KVIK teaching kitchen, were also involved in the preparation.
After completing BGE KVIK, she worked as a cook at the Tanti restaurant. She also worked as a cook at Klassz restaurant, then advanced to sous chef at Mandragóra restaurant. She returned to a cook position at Ramazuri restaurant. At Kert Bistro, she began as a cold kitchen cook, but her pastry talent was noticed, and from then on she worked and continues to work as a pastry chef. Since September 2022, she has been the head pastry chef at Rutin restaurant and its associated MiMi’s patisserie.
In 2023, she gave a pastry demonstration at the Gourmet Festival, which supports young talents.
